About us at www.marjamies.com website, my name is Vesa John leinonen. I have worked in the Hospitality and Tourism Industry over 20 years in Australia. My formal schooling and training in commercial cookery started in 1991. Working as a kitchen assistant for several years until I completed my studies and qualified in 1997. From there my journey went on to working with a catering company, several fine Hotels, Banquet kitchens, seasonal work at Ski Lodges, private properties, and family run restaurants. I have worked in many positions with varied responsibilities from; kitchen assistant, commis chef, demi chef, chef de partie and as a head chef.
In 2008 I travelled to Finland and have been living here since then. The Nordic environment is fascinating to me in many ways. There are four clearly defined seasons; summer, autumn, winter spring.
The summer season is pleasant, most days around 20 degrees Celsius. No air conditioning required. Yet it is warm enough to get around in a tee shirt for about 12 weeks of the year. The summer starts with the migration of birds from the south, followed by the explosion of new life in the environment that was covered with snow and ice for some six months during the winter. Midsummer and the wild berries are starting to ripen, there are wild strawberries, bilberries, and cloudberries. The seasonal changes are fun to observe, new growth, bird migration, the flowering of plants, berries growing, ripening and harvest season.
Autumn season is interesting because there are the Lingonberries that ripen during autumn, also many types of mushroom grow during the autumn season. The vegetation changes of color are radical and a picture, especially in the far north Lapland. Photography is a hobby for me and I carry a camera most times in the natural environment. The Nordic winter is extreme, lots of snow, thick ice over lakes, and sub zero temperatures for 10 to 12 weeks of the year. Winter sports like cross-country skiing, alpine skiing, snowboarding and ice skating or hockey. Winter cross country skiing can be exciting time during the spring season with plenty of light and clear skies. Photography of the winter landscape is truly fascinating experience with many new adventures to be discovered, caution a must.
Spring season is a dynamic time in nature, once the snow and ice has melted around March-April (variations from South to East, West to North Finland. New life, new cycle and the wheel of life keep on turning around and around towards the future of the unknown.
